What Does “Flash-Frozen at Peak Freshness” Really Mean?

You’ll often see us describe our fish as flash-frozen at peak freshness.

But what does that actually mean — and why does it matter?


What is flash-freezing?

Flash-freezing means bringing fish down to a frozen temperature very quickly after processing, rather than allowing it to freeze slowly over a long period.

The faster freezing process helps protect the natural structure of the fish, which is important for maintaining its texture and overall quality.


Why does freezing speed matter?

When food freezes, ice crystals form within it.

Slower freezing can result in larger ice crystals, which can cause more damage to the delicate structure of the fish.

Rapid freezing produces much smaller ice crystals, helping the fish retain its natural texture when it is eventually thawed and cooked.

What does “peak freshness” mean?

Timing matters too.

Premium fish is frozen while it is still at its best rather than spending days travelling through a supply chain before eventually reaching a freezer.

Freezing essentially puts the pause button on that quality.

That means you can keep premium fish conveniently in your freezer and take out exactly what you need when you're ready to cook.


Is frozen fish lower quality?

Not simply because it's frozen.

The quality of frozen fish depends on the quality of the fish before freezing, how quickly and professionally it was frozen, how it has been stored and whether the cold chain has been properly maintained.

That's why “frozen” and “poor quality” aren't the same thing.

Keep your fish frozen until you're ready to use it.
